Millet groats with sweet potatoes, zucchini, apples and kale

The meal is incredibly simple- you just have to prepare veggies and put them into the oven, cooking millet groats in the meantime. And it also looks great, thanks to turmeric and green vegetables. If you can’t imagine a meal without meat you can add chopped ham or fried chicken. That’s what makes millet groats so amazing – you can adjust it to every palate. 
 
Prep Time: 5 min - Cook Time: 20 min - Total Time: 25 min
 
Ingredients:
 
  • 1 cup The Herbs Organic Millet Groats with Apples
  • 1 sweet potato, diced
  • ½ zucchini, diced
  • Fistful of kale
  • 1 mozzarella ball, diced
  • 1 tsp marjoram
  • 1 tsp The Herbs Organic Thyme
  • 3 tbs olive oil
  • ½ lemon
  • ½ tsp turmeric
  • Salt & pepper to taste
 
Directions:
 
  • Heat oven to 170 Celcius degrees.
  • Prepare marinade for the veggies. Just mix olive oil, salt, pepper, thyme and marjoram.
  • Toss marinade with sweet potato & veggies (leave some marinade for later).Transfer them to a large baking sheet covered with parchment paper. Spread it evenly. Place it in the oven and bake in 170 C degrees for around 10 minutes.
  • In the meantime cook millet groats. Roast dry millet for a few second in a dry pot. Then rinse with cold water, put back to the pot and add 1 glass (cup) water. Cook around 10-15 minutes until millet groats soak all the water up.
