INGREDIENTS

  • 1/2 cup of Health Warrior Premium Chia Seeds
  • 2 cups self-raising flour
  • 1/3 cup plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1/2 cup firmly packed brown sugar
  • 1/4 cup maple syrup
  • 2/3 cup mashed over-ripe bananas
  • 2 eggs lightly beaten
  • 1 cup buttermilk
  • 1/3 cup coconut oil

DIRECTIONS

  • Grease 12 hole (1/3 cup capacity) muffin pan
  • Sift dry ingredients into large bowl. Stir in maple syrup and banana then eggs, buttermilk and coconut oil.
  • Spoon mixture into prepared pan.
  • Bake in moderately hot over about 20 minutes.
