Asparagus With Chanterelles And Sushi Ginger Salad

INGREDIENTS

  • 1/2 kg green asparagus
  • 10-12 Chanterelle mushrooms, cleaned
  • 1 tbsp butter
  • 100g The Ginger Party Organic Sushi Ginger
  • 1 tsp honey
  • 1 tsp rice wine vinegar
  • Juice of 1 lime
  • 1 tbsp sesame oil
  • Salt and pepper

DIRECTIONS

  • Wash and trim asparagus
  • Steam asparagus until just tender, 3-5 minutes. Drain and rinse under cold water
  • Melt butter in Sauté pan add mushrooms and sauté 2 minutes, then remove from heat
  • Whisk remaining ingredients together in small bowl
  • Slice asparagus on the bias into 5cm pieces
  • Toss asparagus and mushrooms with marinade
  • Serve at room temperature
